Dum Pukht is a cuisine that originated on the frontiers of war in the time of kings and Maharajas. The food is cooked on a very slow fire for long periods of time, giving it enough time to soak in all the aromas and juices of the ingredients and the light spices. The restaurant at Maurya is one of a kind and churns out some of the best meat dishes you have ever had. The decor is luxurious, befitting royals and heads-of-state and the food presentation is elaborate, served in silver crockery and priceless crystal. There is also live Ghazal music in the evenings.
