Maya is a standout in Dubai's dining scene, if for no other reason than it serves Mexican food with flair. Consultant chef Richard Sandoval fuses traditional Mexican ingredients with Europe and Asia influences, just as he has done with Maya restaurants in New York and San Francisco.
