A driveway off Huay Kaew Rd. next to the Hillside Condominiums leads to a giant shelter housing Chiang Mai's biggest and most famous hot pot restaurant. Once seated, a waiter will deliver a flaming bucket of charcoal to the table and set up the pound-cake-pan-looking hot pot bowl and grill. Head to the buffet and select your favorite meats, vegetables, and seafood to either add to the soup or grill on the dome. The buffet also includes a number of a la carte dishes, Japanese dumplings, and prawn to be grilled separately on large grills to one side of the shelter. Fruit, cakes, and donuts are for dessert. A live band entertains diners with Thai country music and jokes. -Scott Johnson
