Fleur was once Fleur de Lys, but Chef Hubert Keller redesigned the restaurant, transforming it into a modern small-plates eatery. Just because the plates are small doesn't mean that the style and flavor are small, however. The interior design is upscale, but comfortable and inviting. Keller took inspiration for the small plates from his travels throughout the world, so you'll find dishes like steak tartar, foie gras, hummus and baba ganoush, and risotto scallion. Diners usually order two to three of the small dishes, which are served artfully. Presentation counts here, with dishes like oysters arriving at the table atop a bed of ice, in an elaborate square glass container. Fleur specializes in small plates, but also offers large plates. Selections include fish, ribs, and a $5,000 hamburger.
