Aamanns has done for the Danish open sandwich delicacy smørrebrød what Noma has done for Danish cuisine in general, elevating it from a somewhat old-fashioned tradition into a dynamic and trendy culinary art. Since Aamanns opened as a small smørrebrød shop and deli with big ambitions back in 2006, the popularity in Nordic cuisine allowed Adam Aamann's empire to go from strength to strength, offering a catering service and then in 2009 opening a restaurant next door, 'Aamanns etablissement'. Lunchtime is quite traditional, or, in their own words, 'old classics with a new twist', like open sandwiches and steak tatare, while the seasonal evening menu is much more adventurous: The chefs here have been poached from places like MR and noma. A 3-course menu plus wine and coffee is available on Wednesdays and Thursdays for 490kr. In the deli, smørrebrød to go is offered between 10.30am and 4pm.
