Chef Michael Mina has thought of every way to cook seafood: salt-baking, wood-grilling, cast-iron griddling, and ocean-water poaching. Diners at American Fish who are unfamiliar with any of these methods will have the chance to experience what each one does to the flavor and texture of specific types of seafood. Surf and turf dishes are also offered—but with a twist: Kobe beef and abalone shabu shabu, for instance. For those who don't like fish, prime rib and Angus beef are available. The shrimp and grits appetizer wins a surprising number of fans—perhaps because a lot of people outside of the Southern United States don't know that grits are just corn.
