Patrons pick a theme for their meal (the sea, beef, white truffle duck are some of the themes) and then Giovanni prepares. While the restaurant has a sleek modern feel to it, it is surrounded by tree trunks and recycled materials that keep the space exceptionally warm. The trees like many of the Bistro Apollo's building blocks are re-used much in keeping with today's more eco-conscious living, but also with the thick history of Montreal, so ingrained that many of the chairs are actually taken from Montreal's shrine to hockey, the old Forum. The ambiance is great, and inspiring but its what's on the plates that keeps people coming back for more; As raclettes, sushi, kangaroo sauce, cocoa-coffee risotto,  and other dishes with poetic names like "Crying Tiger (beef inspired by a Thai legend) pass by your table you will find your mouth watering while awaiting the surprise that the chef has prepared specially for you. The prix fixe card comes with a salad or soup course and a dessert which changes  daily, but the piece de resistance is the main course. Based on the above mentioned themes, patrons choose from the main ingredient (surf and turf aside, one can also select others from ox, to scallops, and then can even decide with the wait staff how to best prepare your meal. Yes it takes a little work, but the staff will cheerfully guide you along the way to a collaborative gastronomic masterpiece.   While one is more than welcomed to bring their own vino—Bistro Apollo has quickly grown a reputation for offering some of the best wines available, from their wine vault, and usually at great prices.  Most opt to focus on creating their own meals, and letting the expert sommeliers choose the appropriate accompaniment to your main dish.  While venturing into anything new can often times be a frightening experience, we can ally those fears-- Bistro Apollo  might be a new experience, but it would be hard to find as tasty or comforting new experience anywhere.
