The Clean Slate is a lovely room in Midleton and like nearby Ballymaloe House, (where chef Colm Falvey trained), the cooking combines rusticity with delicacy capturing the essential character of Irish farmhouse cuisine. Popular dishes include deep fried squid with Provencal sauce and sweet basil oil, cod baked with a crab and herb crust with chive butter sauce, poached wild salmon with a cucumber hollandaise, and Elfordstown duck with an orange and port sauce. Excellent culinary skill is applied to high quality locally produced ingredients, served in an unmediated way. Prices are very keen, and the service is excellent.
