The word Cru is French for 'raw' and that is how everything is served at Crudessence. Embracing the Raw Food movement wholeheartedly the chic restaurant embodies all the aspects of this exciting trend in healthy cuisine, by ensuring that everything is prepared deliciously, looks beautiful, and makes you feel even more energetic. After a feast at Crudessence you feel the opposite of the near-slumber a traditional Thanksgiving meal can induce, you bounce with energy. And how can you not in this clean and modern space that serves you; Spagatti, Sheperd's Pie, Mushroom Canneloni, Pizzas and veggie Burgers, and of course, all of thees are raw. Originally in a small Rachel street space, nestled into Jean Mance park and facing the mountain, Crudessence has now opened up a second location right downtown on Mackay Street. The new one is even more modern looking, continuing the trend. Yes, this is vegetarian food, but of the highest quality and not at all hippy—sleek, but stylish, with a most attentive wait staff. Perhaps it is because of their enthusiasm for Raw Food, which is a way of preparing food where the food's enzymes are still intact by the time your plate is served. By dehydrating and fermenting and soaking and other alchemical raw food processes the end result is angel haired pasta (that is really a veggie) or warm comfort food. But all vibrating with life. Naturally there is a wide selection of teas and juices at Crudessence. Including tehir very own home-made "Kombucha tea" (if you've never had this sparkling mushroom tea before, treat yourself to the champagne of the veggie world). There are more deserts to choose from at Crudessence than one would think entering probably the healthiest restaurant in Montreal; from cakes and pies to raw delicious chocolate. This might be healthy, but who says healthy can't also be decadent If you are a raw friendly vegetarian and coming to Montreal, Crudessence will be a heaven for you, you'll probably know the wait staff by name by the time you leave. But you don't have to be raw or even vegetarian to enjoy Crudessence, if you're the kind of person who likes to take chances and live life to its fullest, not afraid of a little yoga or a new culinary experience, then get ready for some raw unadulterated flavor. Your palate and whole body will thank you.
