Set in the hamlet of Bourguillon, which some German-language maps refer to as Bürglen, 3km (2 miles) east from the center of Fribourg, this is one of the grandest restaurants in the district, with unabashedly formal service rituals and an appropriately grand setting whose origins go back to the mid-19th century. This is country dining at its finest, as shown by a rack of culinary awards earned by owner and resident chef Alain Bächler. Menu items change frequently, emerging as sculptural testimonials to the artistry of its owner. The best examples include a lasagna of crêpes with exotic mushrooms, freshwater fish in puff pastry with succulent herb-flavored butter sauces; and filet of venison with a marrow and port wine sauce. Be assured that whatever individual dishes we might be able to list will have changed by the time of your visit, but ingredients are very fresh and among the finest in the district. Savor a meal here -- it's very much a dining spot on the grand culinary circuits of Switzerland.
