Founded by Mr Hideto Kawahara whose father established one of the three most renowned ramen shops in Kyūshū - Hide-Chan takes the culinary techniques developed by Kawahara senior over some 50 years ago to bring a customized taste of the authentic recipes first to Tokyo, and then New York. Following his motto of "Fit for Lifestyle", "Healthy Eating" & "Commit to Authentic Taste", Hide-Chan is set to become a successful ramen shop that offers healthy, stylish and flavoursome choices to Hong Kong. Embracing a family ramen tradition, the first Hide-Chan Ramen opened in Fukuoka Japan in 1993, followed by Ramen-ya Hide and Hakata Ramen Hide in Tokyo in 2002 and 2003. In 2010, Hide-Chan Ramen NY Noodle Factory was open in New York. The legendary tonkotsu stock at Hide-Chan Ramen is prepared by boiling selected pork legs for over 24 hours, and forms the basis for our three signature soup bases, including white HIDE which touts an original thick tonkotsu taste that is free of MSG, black HIDE for the charred onion tastes and red HIDE for the miso plus home-made chilli taste. A slender, resilient noodle made to 3 different degrees of firmness is perfect for carrying soup and is a favourite among Japanese foodies. Tsukemen is another highlight not to be missed. Dipping sauces come separately for both Black Tsuke Hide and Red Tsuke Hide, both taste best with toppings like roasted chasiu, soft-boiled eggs and spring onions. Always a perfect companion to ramen, Hakata dumplings are pan-seared for a crunchy savory that is to be enjoyed with a host of toppings including Green Onion, Cheese or Tarako Mayonnaise.
