Il Falchetto is one of Perugia's best and most popular dining spots. Try to sit in the more atmospheric back room, with its 14th-century stone walls and ceiling, or out on the piazza if it's summer -- during Umbria Jazz; it's like having free seats to the concerts on Piazza IV Novembre. The dish to order is falchetti verdi, a personal-size casserole of rich, filling spinach and ricotta gnocchi baked with tomato sauce and cheeses. Or, sample the umbrichelli alla casalinga (homemade fat spaghetti in spicy tomato sauce). Then try a tris della casa, made up of three regional specialty secondi that might include torello alla Perugina, filetino di vitello (very thick, tender milk-fed veal served with porcini, truffle, and wood mushrooms), or an agnello rope twist of grilled lamb.
