After 20+ years as a sushi chef, Hajime Sato longed for a way to make Japanese inspired cuisine that was more accessible to the American palate. Many beer-fueled evenings later, the idea occurred to Hajime to introduce the Japanese style of breading meat and deep frying it (katsu) to America's classic hamburger. Every ingredient was carefully considered, each detail painstakingly planned from the bottom up, until the original concept of KATSU BURGER was born.
