This is a wonderful find, hidden away in an arched cellar underneath the headquarters of Waterford Chamber of Commerce. It exudes a kind of effortless class, without delivering too big a hit to the wallet, and uses local ingredients to create classic French flavors. Typical dishes include organic Clare Island salmon with beurre blanc, or fillet of Irish beef with Wexford mushrooms and red-wine reduction. Service is slick, professional, and attentive; this is not the kind of top-tier restaurant where you have to sit up straight, or feel shy about asking for help with the rather dizzying wine list. A splurge, yes, but worth it.
