In the rapidly rising neighborhood of Barrio del Carmen, this is one of the most imaginative restaurants in Valencia. Its minimalist and chicly modern decor employs a massive use of black, red, and white. Prepare your palate for a parade of sunny flavors. The starters are creative and eclectic, including ice cream made with virgin olive oil over a tomato-and-olive sauce. The eager-to-please staff will tempt you with such delightful main courses as codfish with caramelized saffron and honey or else an extremely appealing Argentine baby beef loin with watermelon sorbet and jamón serrano (cured ham). We were especially excited by the caramelized Iberian pork loin with a chestnut purée.
