Maiffret, 31 rue d'Antibes (04-93-39-08-29)--but the real local specialty is fruits confits (jellied fruits, also called crystallized fruits), which became the rage in the 1880s. Maiffret sells these, especially in summer, when the chocolates tend to melt. Pâtés and confits of fruit, some of which decorate cakes and tarts, are also sold. Look for the Provençal national confection, calissons, crafted from almonds, a confit of melon, and sugar.
