In times past, the "Gauchos" on the "Estancias", the South Brazilian cattle ranches, cooked their meat in the open air on spits above a charcoal or wood fire. This is the South Brazilian method of grilling meat. At PAMPA CHURRASCARIA, it is as if you are in the pampas of South Brazil.
