In a 200-year-old stone-trimmed building named after one of the region's ancient and noble families, Relais de Saulx is decorated with heavy timbers, oil paintings, and all the accouterments you'd expect from one of the region's most respected restaurants. The kitchen prepares traditional Bourguignon cuisine and up-to-date adaptations. Staples are Bresse chicken with morel sauce, scallops with truffle sauce, sea bass with fresh morel, and roast pigeon with sauces and garnishes that vary according to the season.
