Tucked off the lobby of Moncton's best hotel is The Windjammer, probably its best restaurant; this dining room is considered in some circles to be one of Canada's top hotel eateries. With its heavy wood and nautical theme, it resembles the private officer's mess of an exclusive ship. Yet this isn't a fish-and-chips joint: The menu is ambitious, and the dining room has garnered an excellent reputation for its dishes, including appetizers of oysters or a cold seafood "martini," or entrees such as squid-ink linguine with fiddleheads, a ginger-garlic filet salmon, the pan-roasted black cod, an herbed Arctic char, and simple lobster. Despite the seafaring decor, the chef serves up plenty of treats for carnivores, including a bison ragout appetizer, a roasted New Brunswick rack of lamb, a chateaubriand of bison, and a tenderloin flambé prepared tableside and then garnished with a peppercorn sauce.
