In a city crowded with fine Italian restaurants, fresh arrivals need be something special to survive. Tre Bicchieri not only persevered through its first year, it prospered. The Toscana eatery in Itaim Bibi won the praise of two of the leading voices on cuisine in São Paulo, as both the Guia 4 Rodas and Guia Folha guides named Tre Bicchieri as the best new restaurant of 2010. Chef Rodrigo Queiroz employs a cooking style and pasta machines direct from Italy. Pastas, meats and combinations of the two are the specialties of the house. The Papardelle al Ragu de Coniglio, for example, joins pasta and rabbit spiced with green peppers and chicory. Tre Bicchieri draws its name (meaning three cups) from the Italian mark of excellence for wines, of which the restaurant boasts 250 different labels.
