Aria brought in several big-name chefs, Julian Serrano among them. Like the other notable chefs, Serrano created a signature restaurant that reflects the cuisine of his native Spain—especially tapas, a dish that's been growing in popularity in the United States. The small dishes, appetizer-sized, are a perfect solution to two challenges: portion sizes and cost. Both can be easily adjusted with small plates, although at his eponymous restaurant, you may decide to forget about portion control and cost.
