Vegetarian food has taken a long time to settle into Santiago, with a few sort of tofu-and-potato restaurants paving the way, and a number of nicer, more esoteric restaurants also holding ground. But as time goes on and more people go veggie, or at least part-time veggie, and the general food awareness in Santiago goes up, it was just a matter of time until a posh and experimental vegetarian restaurant stepped in to fill the gap. Well-reviewed chef Sol Fliman opened the restaurant recently, and it's been very well reviewed for its market-fresh dishes, with preparations including a layered pastaless eggplant lasagne, omelettes with farm-fresh eggs, a cherry gazpacho and stirfried veggies topped with almonds beside what else quinoa. The restaurant is breezy and open, with outdoor seating, light portions, and no meat on the menu.
